Seafood Paella - Ingredients for 4 servings

200g (7oz) prawns or shrimp
400g (13oz) mussels (scrub and rinse well)
150g (5oz) olive oil
400g (13oz) rice
water, salt, a pinch of saffron
Heat the oil and put in the rice, spreading it evenly over the paella pan. Add the prawns or shrimp and mussels. ....Fill the paella pan with water and the corresponding salt and saffron.....
Boil for 10 minutes. Reduce heat and simmer for 10 minutes. Once the rice is dried, let stand for a few minutes to settle before serving.
